We've tried a few new recipes lately that I just had to share. Since the hubs has been fishing in Charleston a lot lately, we've had a freezer stocked with mahi mahi. We decided to try this recipe - Blackened Fish Tacos with Avocado Cilantro Sauce - and it. was. amazing. The rub would be great on any fish. We had friends and family over and they all agreed! We will definitely be trying these again (preferably post baby when I can have an ice cold salty margarita to go along with them)


Next up I got the wild idea to start making up a few freezer meals to have on hand post baby. WHO am I? Certainly no Betty Crocker, but first up I tried Pioneer Woman Sour Cream Noodle Bake. I made double recipe so we had half one night and I put the other dish in the freezer. It was sooo good!




I plan to make a couple more freezer meals before he gets here and I'll try to share which ones we love best. I always look for easy peezy, so trust me nothing too difficult here in this household.

Hope a little preparation before hand will help this mama stay less stressed as a mom of TWO.
