There's a first time for everything right? Well this year we decided it was time to start our very own garden. My granddad, who lives right next door to us, had two HUGE gardens when he was able to maintain them. That was just "the norm" back in those days. However, even though I was born and raised in the country, I really never thought I would see the day that we'd be pickin' vegetables out of the garden and cooking em' that night for dinner.
Oooooh but we are.
We knew Papa would be so excited if we had a garden for all of us to enjoy fresh corn, cucumbers, squash, tomatoes, okra, peppers, and more. Chad has worked so hard (along with much help from his dad) on this garden.
Chad loves jalepeno peppers . No idea what in the world these are gonna taste like, nor do I think I'll find out, but I'm sure he will go through these two jars in no time.
and finally last night I FRIED OKRA for the first time ever.
Surprisingly, it wasn't a disaster and Chad said it was the best okra he'd ever had.
[Now, if my mother in law is reading this, I'm pretty sure he just said that to make me feel good! ] But seriously, it was de-lish and I have to say fried okra {especially fresh out of the garden} is one of my absolute favorites.
Now that I have the "frying okra" down pat, may have to try this recipe from July's Southern Living? Have you ever heard of such?
Fried Okra Tacos
Ingredients
Tortillas
Shredded Lettuce
buttermilk fried okra
fresh tomato salsa
shredded pepper jack cheese
guacamole
sour cream
Preparation
Fill warm tortillas with shredded lettuce, hot fried okra, and fresh salsa.
Serve with shredded pepper jack cheese, guacamole, and sour cream
